Plans a direct cuisine
preparation and cooking activities of several restaurants in an establishment,
restaurant chains, hospitals or other establishments with food services

Connect and consults with
clients/guest regarding weddings, banquets and specialty functions
·
Plan menus accordingly and
ensures cuisine meets the quality standards
·
Estimate the requirements
accordingly and may need to estimate food and labor costs
·
Take charge of the activities
of sous-chefs, specialist chefs, chefs and cooks
·
Arrange for equipment purchases
and repairs as per the requirement
·
Look after the Recruitment and staff
hiring
·
May need to work and prepare -
cook cuisine on a regular basis, for special guests at special functions
Sous-chefs perform some or all of the
following duties as needed:

Take command of the activities
of specialist chefs, chefs, cooks and other hired kitchen workers
·
Familiarize others with new
cooking techniques and new equipment to cooking staff

Manual planning menus and
requisition of raw materials and kitchen supplies for the gourmet
·
Need to prepare and cook meals
or specialty foods

following duties:

Accumulate raw materials,
prepare them and cook complete meals or specialty foods, such as pastries,
sauces, soups, salads, vegetables and meat, poultry and fish dishes, and create
decorative food displays for special events such as banquets

in preparation, on cooking, garnishing and presentation of food

Formulate new recipes
·
Supervise cooks, chefs and
other kitchen staff
